4 Eggs

75 millilitres Double cream

100 gram Cherry tomatoes

1/2 jar Roasted peppers

75 gram Feta

8 Olives

Instructions

1.  Preheat the oven to 190 C fan / 200 C / Gas Mark 7. Line an oven dish with baking paper.

2.  Break the eggs into a mixing bowl, whisk and add in the cream.

3.  Half the cherry tomatoes and drain the roasted peppers, slicing before adding both into in the mixture. Crumble in the feta. Season with pepper only. Stir to combine.

4.  Pour into the oven dish, making sure the tomatoes and peppers are evenly spread throughout the mixture. Drop the olives into the dish evenly. Bake in the oven for 20-25 minutes. Set a timer for the cooking time, then clean your station before moving on to the next dish.

5.  At the end of the cooking time, the egg will puff up and should be cooked all the way through. Using a knife, check that it comes out clean.
